From the kitchen of
Kilburnie, the Inn at Craig Farm, Lancaster SC.
Preheat oven to 450 degrees.
Grease 8 muffin tins. Break an Egg in each tin.
Add a tbsp. of Half/Half, Cayenne Pepper to taste, chopped
Cilantro to taste.
Top in order: crumbled Mozzarella, Grated Cheddar, and
grated Parmesan Cheeses.
Do not overfill.
Bake exactly 8 minutes.
Take out of the oven and let rest for one minute.
Lift the Shirred Eggs out of the tin with a wetted spoon
and placed on a round of Herbed Toast or English muffin.
Serve immediately with 2 slices of crisp pan-fried
Bacon.
