Something for the Sweet Tooth from the
Hacienda Bed and Breakfast, Tucson. Arizona.
Ingredients
- 2/3 c butter or margarine melted
- 1/4 cup peanut butter
- 1 cup packed brown sugar
- 1/4 cut light corn syrup
- 1/4 tsp vanilla extract
- 4 cups quick-cooking oats
- 3/4 cup coconut
- 1 tbl vanilla
Topping:
- 1 cup milk chocolate Chips
- 1/2 c butterscotch chips
- 1/3 cup peanut butter
In a mixing bowl, combine the butter, peanut butter,
brown sugar, corn syrup and vanilla. gradually add
the oats and coconut. Press into a greased 13 x 9 x
2 in baking pan. Bake at 400 deg. for 10 - 12 min or
until edges are lightly golden brown. Cool on a wire
rack for 5 minutes.
Meanwhile, for the topping, melt chips and peanut butter
in microwave or saucepan. Stir until blended; spread
over warm bars. Cool completely; refrigerat for 2 -
3 hours before cutting. Yield: 4 dozen.
NOTE: this recipe DOES NOT contain flour. It
is very good.
